Chocolate Pecan Granola Bars

There’s simply nothing that replaces making your own snacks and treats from scratch with full control over every ingredient you add.  I have always loved homemade granola bars but the store-bought versions aren’t always the healthiest choice.  This simple no-bake recipe is a breeze to whip up with just 6 simple ingredients!  If you require a gluten and dairy free diet, simply ensure you use certified gluten free oats ( I love Bob's Red Mill!) and dairy free chocolate chips!  Both are easy to find in the organic section of your supermarket. 

Makes 8 bars
Ingredients:
  • 1 1/4 cups rolled oats 
  • 1 TBSP of whole flaxseed 
  • 1/3 cup raw, unsalted pecans 
  • 1/4 cup almond butter (or natural peanut butter) 
  • 1/3 cup raw honey
  • 1/3 cup dark chocolate chips
Directions:
  1. In a large bowl, combine the oats, flaxseed, chocolate chips and pecans.
  2. Stir in the almond butter and honey and mix well. 
  3. Place this mixture into lined pan (I used an 9 x 9) and pat down with your hands firmly to make it flat and compressed.  You can also take a piece of parchment paper and press down evenly to ensure your bars are evenly packed.
  4. Freeze for at least 3 hours prior to slicing into bars.  This will make it easier to cut and will help the bars stay together.
  5. Once cut, store in a glass Pyrex container.  Ensure you place parchment paper between your layers to prevent the bars from sticking to each other.  These freeze well!

Pass Me the Pesto!

Bright green and full of incredible flavour!

Pesto makes pretty much everything delicious! It's so much more than a pasta sauce! You can use pesto with everything from sandwich spreads, salads, dips, hummus, and pizzas just to name a few!
